Head Pastry Chef – Harvey Nichols Fifth Floor Café, Knightsbridge

We are currently looking for a Head Pastry Chef in Harvey Nichols Fifth Floor Cafe, to manage, train and develop Pastry team. To assist in managing the rest of the kitchen to the highest standard, taking charge of the kitchen when required.

Job Objectives

  • Maintain a positive attitude towards staff, customers and any external contact.
  • Carry out staff training on a regular basis, identifying where further training may be necessary and implementing as required.
  • Liaise with the Senior Head Chef with menu development and changes setting portion sizes and ingredients used, ensuring consistency with costing of dishes, support the team to ensure these duties are carried out to the required standard.
  • Manage the kitchen’s stock rotation, ordering and Mise-En-Place.
  • Ensure that all menu items are ready for service at the appropriate times during the day.
  • Produce and serve food in accordance with current authorised recipes and standards set.
  • Help support any section of the Kitchen when required.
  • Ensure that the department is maintained in a safe manner, free of hazards, and that the store Health and Safety Regulations are adhered to at all times.
  • Maintain good care of equipment and utensils within the kitchen and apprise the Head Chef of any equipment or utensils requiring ordering.
  • Maintain a keen awareness of store security procedures and policies and to carry these out.
  • Ensure that stocktaking and stock control procedures are followed.
  • To deliver outstanding and consistency within the food always following our brand values
  • To recruit and develop your team.
  • To manage your department rota, holidays and reviews.

 

Qualifications and Experience required

  • Elementary food hygiene
  • Minimum 6 years kitchen experience with at least 2 years in junior management position
  • Good knife skills
  • Excellent pastry skills
