We are looking for an experienced Brasserie / Restaurant Manager to join our opening team, as we look to open our 2nd Floor Bar & Brasserie in November 2022. The offer will sit alongside our current Retail Opening Hours (10am - 8pm, Monday - Saturday and 11am - 5.30pm - Sundays), with the flexibility of extended opening hours during peak times and for corporate evening events. This is a 40 hours a week role. 

The main responsibilities will be to control and operate the 2nd Floor Brasserie and Reception. You will be responsible with the assistance of the Assistant Managers for the day-to-day running of the Bar, Brasserie and Reception and will be involved in all aspects of managing this area and the staff working on it. You will drive the standards of service within the 2nd Floor Brasserie

You will need to have effective communication skills and a good wine knowledge. You will have strong passion in the development of staff and Managers.   You will need to be a strong leader and build close relationships with the Assistant Managers and ensure that the operation runs smoothly and efficiently at all times. Ideally you will have experience of developing your team, identifying performance issues and addressing them effectively, and managing a successful team.

  • To ensure that all staff have a thorough knowledge and understanding of all items listed on the menus and wine list and available as daily specials by means of regular staff training sessions and tests, to check that all staff are able to impart this information to the customers correctly.
  • To greet customers and to ensure that a base of regular customers is rapidly established and maintained by personal contact and customer recognition.
  • To handle customer complaints efficiently and promptly within the guidelines and to discuss any unsatisfactorily resolved complaints with the Hospitality department.
  • To prepare staff rotas and to ensure adequate staff cover and reorganise rotas to cover for staff absence.  Also, the responsibility to oversee the input of rotas on the time and attendance system and authorise the supervisory level
  • To ensure that all compliance training is carried out according to prepared schedules and that records are kept up to date of these training sessions.
  • To oversee the control of stocks of liquor, cleaning materials, stationery etc.  To liaise with the appropriate buyer of all items to ensure that adequate stock levels are maintained in line with budget set.
  • To assist in the interpretation and analysis of weekly and monthly accounts and to take prompt action to rectify problem areas.
  • To assist the HR department in the recruitment of all new front of house staff for the Restaurant.
  • To be familiar with, and to ensure that, all waiting staff is familiar with the hospitality Health & Safety Policy, and to ensure that correct standards of hygiene, cleanliness and safety are adhered to in the Brasserie/Bar.
  • To ensure that all relevant staff is aware of correct cash handling procedures and that they adhere to them.
  • To maintain and constantly monitor the menu and wine list data held on the till system for the Restaurant, paying special attention to accurate pricing in order to achieve the agreed margin in profitability.
  • Ensures daily briefings materialize, prior to staff members begin their day and prior to service.  Where necessary this should be recorded.
  • To support all operational running of internal and external events in regard to any hospitality requirements.
  • To work with Press and Marketing and the Business Development Manager on all event planning and new business opportunities to promote and secure corporate hire and event space of the 2nd Floor Bar and Brasserie.
